Sweet Potato Casserole

Makes 12 Servings

2/3 cup Butter, softened
2/3 cup Packed brown sugar
2/3 cup All-purpose flour
2/3 cup Oats
1/2 tsp Cinnamon
1 cup Fresh Cranberries
2 23 oz. cans of Sweet potatoes (Yams)
Marshmallows

Preheat the oven to 375º.

Mix the butter, brown sugar, flour, oatmeal, and cinnamon in a medium to large mixing bowl.

Drain both cans of sweet potatoes. Pour one can into a 2 quart Pyrex bowl, and spread evenly. Add 1/2 of the crumb mixture to the potatoes. Pour the rest of the potatoes in the bowl, and spread evenly. Top with 1 cup or more of fresh cranberries and the remaining crumb mixture.

Bake uncovered for 30 minutes or until berries are done. Top with marshmallows and broil until golden brown.

Tips

  • If using a gas stove, make sure the flames are not too large on the broil setting. The marshmallows may catch fire.
