Oatmeal Cake with Coconut Icing

8" x 8" Pan 13" x 9" Pan
1/2 cup 1 cup Oatmeal
2/3 cup 1 1/4 cups Hot water
1/2 1 Stick of butter
1/2 cup 1 cup Granulated sugar
1/2 cup 1 cup Brown sugar
1 2 Eggs, beaten
1/2 tsp 1 tsp Vanilla extract
1/2 cup + 2 1/2 Tbsp 1 1/3 cups Flour
1/2 tsp 1 tsp Baking soda
1/2 tsp 1 tsp Cinnamon
COCONUT ICING (Below)

Preheat the oven to 350º. Grease and flour the cake pan.

Pour the oatmeal, water, and butter together, and let the mixture set for 20 minutes. Stir in sugars. Add eggs & vanilla. Sift the dry ingredients and add them to the oatmeal mixture. Mix well. Bake for 30 minutes or until the cake tests done. Coat it with coconut icing while warm.

Serve warm or room temperature.

Coconut Icing

Makes 1 Batch

8" x 8" Pan 13" x 9" Pan
1/2 1 Stick of butter
1/3 cup + 1 Tbsp 3/4 cup Brown sugar
1/8 cup 1/4 cup Milk
1/2 to 1 cup 1 to 2 cups Coconut flakes
1/8 cup 1/4 cup Nuts, chopped

Melt the butter. Stir in the brown sugar & milk. Add coconut & nuts. Spread it on the warm oatmeal cake. Place it under a broiler until the top is brown.
