Buttermilk Pancakes

Makes 4 to 5 Large Pancakes or 8 to 10 Small Pancakes

1 cup All-purpose flour
1 Tbsp Sugar
1 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Salt
1 Egg, beaten
1 cup Buttermilk, or 4 tablespoons Saco Cultured Buttermilk with 3/4 cup water
1 tsp Vanilla
2 Tbsp Oil (or melted butter)


Sift dry ingredients together in a mixing bowl. Add egg, buttermilk, vanilla, and oil. Beat with a wire whisk until batter is smooth. Spoon mixture onto a griddle. When bubbles cover the top of the pancake, flip it over. Cook until underside is golden brown.
