Breakfast Burritos

Makes 4 Burritos

4 to 5 tortillas
4 Eggs, beaten
1/4 lb Breakfast sausage, scrambled (optional)
1/4 cup Onions, chopped (optional)
Cheddar cheese, shredded
Salsa (optional)
 

Scramble sausage and keep a little grease in pan (drain the excess). Mix eggs, onions, and sausage. Scramble in pan with grease over a medium flame. Sprinkle a line of cheese in the middle of a warm tortilla. Then, divide the scrambled mixture into the tortillas (on top of the cheese) and spread salsa over (about 1 tablespoon). Fold into a burrito and serve.

Tips

  • If you add everything into the burrito, you will need a larger tortilla, otherwise the Fajita Size are perfect.
  • Chopped, cooked Bacon or Hashbrowns may be substituted for the Breakfast Sausage
