Kay's Cranberry-Apple Relish

This fruit salad is not only tasty but low fat and easy to make. Enjoy.

Makes 6 to 10 Servings

Cranberry Sauce (Below)
Fresh Cranberries
2 Apples (Gala, Fuji, or Jonagold)
1 - 1 1/2 cups Pecans
15 oz can Mandarin Oranges
1/4 cup Sugar
1/2 tsp Orange Peel (or 1 tsp if fresh)
1/2 - 1 cup Coconut (optional)
 

Sort out fresh Cranberries from a 12 oz bag.  Discard any bruised or mushy cranberries.  Make Sauce below with 2 cups of the cranberries and chill to add later.  Roughly chop the remainder of the Cranberries.  Put the chopped Cranberries in a Salad bowl.  Peel and chop (into very small pieces) the apples and add to the bowl. Chop the pecans and add. Mix in 1/2 of the juice from the Mandarin Oranges and drain the rest.  Add the Mandarin Oranges, Cranberry Sauce, and remaining ingredients to the bowl.  Mix well and chill until served.

Cranberry Sauce

You can substitute one can of Cranberry Sauce with berries for the homemade version.

Makes 1 Batch

2 cups Fresh Cranberries
1/4 cup Orange Juice
1/4 cup Sugar

Rinse Cranberries and combine with all ingredients in a small sauce pan.  Heat over medium-high heat until boiling.  Then simmer for another 5 minutes.  Remove from heat and cool.  Chill until used in recipe.  (If no time to chill for a few hours, then place in the freezer for 30 minutes.)
